Vegetable Broth


  • 2 stalks celery including tops coarsely chopped
  • 3 carrots coarsely chopped
  • 1 large onion coarsely chopped
  • 1 leek white part only chopped and rinsed well
  • 4 cloves of garlic coarsely chopped
  • 2 bay leaves
  • 2 sprigs fresh thyme


  1. Add all ingredients to the slow cooker.
  2. Add enough water to your crockpot to fill it three-fourths full. (Do not fill more than three-fourths. Your slow cooker will not work correctly if you do.)
  3. Cover slow cooker and set to low.
  4. Cook for 8 to 12 hours.
  5. Strain into freezer safe jars, leaving one-inch headroom.

You can freeze for up to 6 months.
